Once considered a peasants drink, Grappa has become a sophisticated choice of spirit around the globe with Italy’s top wine producers as the leaders in this movement. Not one to waste an opportunity in creating outstanding food and beverage, Lorenzo took on this feat to create what is now a line of three Grappas: Syrah, Cabernet and of course the most traditional being Grappa di Lorenzo, made from the 100% Sangiovese Grosso grapes.
Petroni Vineyards is known for producing the extremely rare and high-quality estate grown Sangiovese Grosso clone. This full texture Grappa has all the character that is common with Sangiovese Grosso, made from the pressed grape skins. The intense aromas evolve into fine mineral qualities with a supple, smooth and lasting finish.
Following an extended maceration and having pressed the wine from the skins, the almost-dry skins are rushed to the distillery for immediate processing. Once in the hands of the distillery, the spirit is carefully extracted from the skins, one batch at a time. This is a time consuming process and usually is completed through the night to ensure freshness. The Grappa is bottled the following year after it has been triple distilled and conditioned for over twelve months prior to bottling.
